Marketing Strategies for Local Businesses – Make More Money with the right First Impression

Allow customers to look around, settle in before asking a question. They don’t know what they don’t know. They don’t know enough to ask a question, so do not disrupt their first experience and first impression. Once a customer has looked around, looked at the menu, admired your decor, then they will have a better sense for what they would like and what to order, and THAT is when you can start asking the kinds of questions that can help you upsell their order. Here are some specific scenarios and questions you can ask to upsell every order and to increase the likelihood the customers stay longer:

If you have a meat and cheese option, or any food or snack, be sure to offer it when the customer places their first order. Customers are less likely to order additional items on their 2nd or 3rd order. Customers order the most on their first order, so do not lose this opportunity. As well, be sure to inform the customer that the food pairs well with their drink order or wines.

Use the Power of Suggestion by using the phrase “Keep it open?” instead of offering right away to close their tab on their credit card with the first order. In most instances that will be the only order you receive as customers are reluctant to places orders on at a time, charging their credit card separately each time. In many cities, bartenders do not suggest closing the tab on the first order, unless the customer specifically requests it. When a tab is open, customer are ALWAYS more likely to spend more money with you. As well, if a customer has an open tab, when they come to close it, offer “one last round and then close it?” to suggest they place another order then, settle up with you, and then they may leave when they are finished. Again, suggesting a customer close their tab is suggesting they don’t spend any more money with you.

Signage and accurate information is critical for attracting new business and new customers. We drive by so many wineries that look open, but are closed. Then there are wineries with zero signs that they are open, and tourists and visitors are driving right by since they think the lack of an open for business sign means closed. Realizing the hours in North Georgia and the days when open may change here due to the season, winter hours for instance, consider an LED display at the entrance so that it can be changed when winter hours kick in, or when you extend your hours in the summer. Remember in most of the country, travelers are accustomed to establishments closing later than 5 or 6pm and people are not expecting last call at 530pm. If the customer knows your hours, they can adjust their visit to arrive earlier than they had planned.
